You want to set two properties:
eclipse.product=com.genuitec.myeclipse.product7.ide
osgi.splashPath=platform\:/base/plugins/com.genuitec.myeclipse.product7
The splash will change to the ME7 splash but the product branding is important for some tie-in product functionality.
