I have a question, is it correct that the Matisse UI Builder has been removed in version 2025.1? If so, is it possible to add it via another way or is there another alternative that can be used?

That is correct, Matisse has been removed in 2025.
The workaround right now is for you to keep using Matisse in MyEclipse 2024. We’re investigating how we can continue to provide support for legacy tech in MyEclipse.
It’s a real bad that the feature has been removed. Because it’s actually the only feature we use MyEclipse for and we haven’t switched yet.
Would it be possible to copy certain jars from the plugin folder from 2024 to 2025? Or download the feature via Install from Site?
Since your request, we’ve worked on a solution that will allow you to use it with 2025. Please write to support@genuitec.com with a reference to this thread and I will share further details.
