Want to follow the correct upgrade procedures and a bit confused.
Version ID is 3.7.2
but Build ID contains 3.8.Beta2So when reading directions for upgrading what version do I have?

Paul,
You have 3.8 Beta 2, which has a build id of 3.7.200 (the followin zeros are not insignificant). We tag beta releases with a .x00 service build because we reserved 3.8.0 for the GA release.
For upgrading, I’d suggest that you install the new version in parallel. Just do a fresh install of Eclipse 3.0.1 and MyEclipse 3.8.2. Once it’s up and running with a default workspace, just restart it and point it to your existing workspace, or better yet a copy of it.
