When I deploy it without making any changes to its properties, it deploys to \jboss-eap-6.2\standalone\deployments\stafftrack_ear_ee6.ear. For technical reasons, I do not want it to deploy to a directory named the same as the project name. I removed the deployment and then I opened the EAR project Properties and went to the MyEclipse->EAR pane. I changed the “Archive name” field to stafftrack_ear.ear and redeployed the application. It still uses the project name as the name of the deployment directory. If it doesn’t use the “Archive name” field for the directory name, how can I change the directory name?

Are you deploying the EAR in Exploded or Packaged mode?
The custom archive name for EAR is supported for Packaged deployments only. The custom archive name is supported for modules of EAR (ejb,war and jar) in both Exploded and Packaged deployment modes.
I have filed a PR for the dev team to support custom archive name for EAR in Exploded deployment mode.
