Is there a way to just install the UML Modeler and not have any menu options showing anything else anywhere?

Go to Window > Preferences > General > Capabilies and click Advanced.
You can uncheck “MyEclipse Standard Tools” and the options besides UML under “MyEclipse Professional Tools”. That should hide everything else.
