I am afraid, Java 7 support is not available on ME 9.1.
ME 10 is going to be based on Eclipse 3.7.0. The next release of ME 10 would support Java 7 which is going to be based on Eclipse 3.7.1. Please refer – https://www.genuitec.com/forums/topic/what-eclipse-version-will-myecliipse-10-be-based-upon/&highlight=Sorry for the inconvenience.

With 9.1 what would happen if you were to use JDK 7, would it just not work or would some of the new JDK 7 API not have auto completion?

You can add JDK 7 as Default JDK and give it a shot. I don’t think content-assist would be an issue. But there are bound to be limitations because JDK 7 is not completely supported in ME 9.1.
