We are currently using MyEclipse 2015 Stable3 and it doesn’t list Tomcat 8.5.x or Tomcat 9.x servers. We would prefer to use a Stable release if possible. Does the current 2016 Stable or 2017 Stable allow for setting up Tomcat 8.5 or 9.x servers?

MyEclipse 2017 Stable 1.0 supports Tomcat 8.5 and Tomcat 9.x. The embedded Tomcat version is also upgraded from version 7.0 to 8.5.
You can download the installer for the Stable release from here and use your current license.
